(on the lees) is the name given to the spumante produced by natural secondary fermentation in the bottle born in our hills

Serving temperature
8° C in crystal wine glasses. Ideal as an aperitif, it is excellent paired with cold cuts, fried entrèes, fish, mushroom or vegetable risottos .

Vinification
Pressing of whole grapes, extraction of free-run must and fermentation on winery lees. Cooling of wine prior to sugar depletion (20 g/L) and integral aging on lees during winter. Bottled without dosage. Secondary fermentation with spontaneous depletion of natural grape sugars preserved by the cold winter climate; aged for 3 months in the bottle. Cycle lasts about 10 months.
