On the scent of wine




The word “rive” describes steep hillsides: within the DOCG zone, the “rive” are the soils that, thanks to the local microclimate, ensure production of the best Prosecco Superiore. 
In Borgoluce, the Rive di Collalto, whether Extra Dry or Brut, are the single-vintage spumantes produced after hand-harvesting of the individual vines around Collalto castle.?
The Charmat method is then used, but the Rive are left for a few months longer on the lees to give this spumante its special elegance and fine perlage.
